Stuffed Mushrooms

The other day my 10-month-old decided to take a short evening nap leaving me with some free time. For a mother who loves to cook un-interrupted in the kitchen and do a little experimenting, this was a welcome nap! Since it was too early for dinner, I decided to make a snack.

I checked the refrigerator, and saw mushrooms, cheese and spinach. It was time for stuffed mushrooms!
Ingredients:
button mushrooms – 10
baby spinach – if you have 10 button mushrooms, pick about 20 leaves
parmesan cheese
mozzarella cheese
bread – 1 slice
lemon juice – half a teaspoon
coriander-cumin powder – 1 tbsp
red chili powder – 1 tbsp, to taste
chaat masala (found easily in Indian grocery stores) – 2 tbsp, to taste
salt- to taste
Preparation:
-Clean mushrooms caps with a wet cloth and remove stems
-Blanch spinach leaves and cut them into smaller pieces
-Roast your bread and after it has cooled, crumble it
-Mix the cut spinach, bread crumbs, coriander-cumin powder, lemon juice, red chili powder, chaat masala and salt in a bowl
-Grate parmesan cheese and add shredded mozzarella
-Stuff this into the mushrooms – be generous!
-Set oven to 450 degrees and cook for about 10-15 minutes
They were so delicious I just had to share the recipe. Now, if only my kids were into mushrooms! Enjoy!
