My Kids Eat Vegetables

Looking for a quick, easy and kid friendly recipe? Do your kids typically scoff at the idea of eating their veggies? Well, do I have the recipe for you!

As a busy working mom, I need quick, healthy meal ideas and simply don’t have the time (or patience!) to battle with my kids about eating vegetables on a daily basis. Egg & Veggie Baskets are my go to item for making the kids and mom happy!

Ingredients
- pastry sheets
- 3 eggs
- frozen mixed bell peppers pieces (fresh will also do)
- frozen corn
- frozen green peas
- parmesan cheese
- mozzarella cheese
- salt and pepper
- red chilli powder
- mini muffin pan

Preparation
- Preheat oven to 400 deg F
- Mix eggs and veggies in a bowl
- Add salt, pepper and chilli powder to taste
- Add in grated parmesan cheese and shredded mozzarella. Mix well.
- Cut thawed pastry sheets (4 or 5 together) in a ‘squarish’ piece
- Press that set of pastry sheets into your mini muffin pan
- Adjust the edges of the pastry sheets to align well with the muffin cup mould
- Fill in the mixture of egg and veggies prepared above into those cups.
- You can close the top of the pastry sheets by pressing them together or leave them open
- If you close them, poke a few holes using a fork on the top to let the steam out while cooking
- Bake on middle rack for 8-10 mins so that eggs and veggies are cooked.
